Recipe for Apricot Jam
Ingredients - 3 1/2 Pints
3 cups diced apricots
1/4 cup lemon juice
7 cups of sugar
1/2 bottle liquid fruit pectin
- Mix apricots, lemon juice, and sugar.
- Boil until apricots are soft.
- Remove from heat.
- Stir in pectin.
- Stir and skim for five minutes.
- Pour into hot jars.
- Adjust lids immediately and process in a boiling water (212 F) bath for five minutes.
- Remove and complete seals unless closures are self-sealing.
